SafBrew™ BR-8 is the first Brettanomyces bruxellensis yeast to be produced in dry microgranules for brewers.
BR-8 offers all the flavor characteristics of wild brett yeast, but with greater control and reliability, eliminating the risk of excessive carbonation and foaming after bottling.
Specifically designed for secondary fermentation in bottles or kegs, SafBrew™ BR-8 produces phenolic compounds that create a distinctive finish that develops over time as the beer ages, a “funky” brett aroma and flavor balanced by refreshing, fruity notes.
Optimal fermentation temperature 15°C – 25°C (59°F – 77°F).
Mix the yeast in at least 10 times its weight in sterile water at a temperature of 25°C to 29°C (77°F to 84.2°F). Leave to stand for 15 to 30 minutes. Mix gently until a smooth, creamy consistency is achieved.
